Healthy Dinner!!

I started my new healthy eating plan today and so far it hasn't been too bad. After Maggie was a champ at Bonefish I knew I could atleast try. Breakfast..1/4 cup Naked juice and protein bar, lunch...tuna with mayo :), and a pluot, snack...hummas and whole grain pita chips, grapes, and granola, and supper, only the most amazing recipe ever!! I got this from Southern living and it is amazing and SO easy.



Parmesan Crusted Flounder (I used tilapia because you know Cordele does not have Flounder!!)



Place 1/2 cup butter into 9x13 baking pan and melt at 450 until it is melted and begins to brown (you can use smart balance).

Salt and pepper 4 pieces of fish.

When butter is ready place fish inside butter and let it cook for 10 minutes.

While fish is cooking mix 1/3 cup of grated parmesan cheese and 1 tbsp paprika in bowl.

After 10 minutes flip the fish and pour the cheese and paprika mix onto the fish. Let bake 5 more minutes.

Then squeeze some fresh lemon juice over the fish and broil it until it becomes flaky.



SOOO GOOD!



Awesome grilled chicken avocado salad- This is one Awesome salad.

I got the pre-seasoned lemon pepper chicken (I made this salad for 1)

Cook 1 chicken breast and chop up

take one red onion and one red bell pepper and dice them. Glaze with olive and brown until tender.

Lay out salad mix.
Place chicken on top
Pour onion and bell peppers
Top with avocado and 3 bacon pieces crumbled.
Add goat cheese
and my favorite part...the dressing!!

Dressing
1/2 cup fat free vanilla yogurt
2 tbs red wine vinegar
1/3 cup olive oil
salt and pepper
1 tbs honey

Mix and chill for 30 minutes

WOW so good!
